‘We are embarking on a 21-day-plant-based-food-challenge, starting today!’ I enthusiastically announced. ‘U-huh.’ was Shaun’s response, together with this eye roll he does.
We lasted two days.
‘No cheese? What do you mean no cheese?’
‘I guess we can add cheese to this recipe… no one will know!’
Clearly, we didn’t follow through the plan. After adding cheese to the first recipe, we used a bit of sour cream the following day, and those veggie fajitas tasted so much better with the addition of beef. We have, however, come across a super simple recipe for a delicious kind-of-mexican-style meal (with a few additions) that looks and tastes beautifully!
And by simple, I mean SIMPLE. I cooked some rice. I also cooked a can of black beans with a bit of chilli powder and a vegetable stock. I opened a can of corn, whole kernels. I diced a tomato. I cut some green onion. And I butchered an avocado. I piled everything on top of each other. I grated some cheese on the top. Added a spoon of sour cream. And garnished the whole thing with a bit of cilantro. Wow!
‘How is this called? So I know what to ask for next time I would like to have this.’
‘Hm, good question… Not sure… How about we just call it The Stuff?’
