Just before I left Florida, I made a big batch of lasagna*. Shaun loves it so I thought he could freeze and eat it even after I am gone. And that’s exactly what he did. However, my lasagna was eventually eaten, and he decided to make one on his own. And this is where the story really begins…

I was at work when I received his call.
“Hey! I’m in a supermarket. What do I need to buy for a lasagna?”
It took me a few minutes to realise that this is really Shaun I am talking to. He never striked me as someone who will be making a lasagna. A pasta, yes. A stake with some rice maybe, yes. But lasagna?! No, I was in a shock.
“Well, get some onion, minced meat, diced tomatoes in a can…”
“No no, I’m making a vegetarian lasagna?”
Another shock! Shaun wants to make a vegetarian lasagna?? Is this really the same person I think I am talking to?
After another few minutes, I managed to collect my thoughts: “Ah OK then, get a zucchini and I like mushrooms, and maybe some other veggies if you fancy them, it doesn’t really matter…”
About half an hour later my phone pings. There was a photo of a beautifully layered lasagna (well, I could only see the top level which was basically just covered in cheese, but I assumed the lasagna was nonetheless layered beautifully). A message “ready for the oven” followed.
Wait a minute… 30 minutes ago, he was still at the supermarket. He still needed to buy all the ingredients and pay for them. I know he doesn’t mock around but that would surely take him at least 10 minutes. Then he still needed to drive home, which takes about 15 minutes. And then he made the entire lasagna in what, 5 minutes??? Impossible! So I called him…
“Hey! Hm, the lasagna looks great! Well, at least the top part, very cheesy indeed. But how did you cook the veggies so fast?”
“I didn’t cook them! They were already pre-cut so I just layered them, and covered each part with a can of diced tomatoes and a white sauce you can also buy in a jar. And I put heaps of cheese on top. This is going to be delicious!”
“OK, sounds… interesting… Let me know how it goes!”
About an hour later I received another message. “I think you were right. I should have cooked veggies first! The cheese is fully melted on top, but the veggies are still raw, even cold, despite being in the oven for ages! I think I will go out for a pizza and deal with this mess tomorrow. Love you!”
I haven’t laughed so hard in a while!
I can’t remember what he had done with his first lasagna, but he’s been practicing ever since. He makes one or even two lasagnas (one veggie and one meat) almost every week, and he really mastered the recipes! No more raw lasagnas in this house :).

*Do we actually say a batch of lasagna? Or is there a more suitable term? Maybe a big dish of lasagna? Nah, that doesn’t sound right… How about large serving of lasagna? Nah, don’t like that either…
**I have actually found a recipe for Raw Vegan Lasagna. I haven’t tried it though, but I will! Or maybe Shaun will give it a go? 🙂
